In audio the word “flat” is sometimes used to indicate flat frequency response (Flat Response) in a device. In music a flat is the opposite of a sharp, but works the same way: basically lowering the pitch of a note by a semitone, or more generally referring to something being below the proper pitch. For example, a singer who sings a note below the proper pitch is said to be flat.
