When I adjust the Varipower on my Bugera TriRec Infinium tube amplifier, the sound cuts out.

The Varipower cannot be adjusted too quickly, or the sound will drop out. Here’s why, according to Bugera:

The Bugera Varipower varies the volume at which the power tubes begin to distort (by adjusting the grid voltage). It should be adjusted to achieve the desired overdrive distortion level for the overall amp volume, then it should be left there (instead of utilizing it as another Master Volume Control).

When adjusting the Varipower, one should adjust it slowly.  If the knob is adjusted faster than the amp can adjust the screen voltage, there will be a momentary drop in output volume as the screen voltage attempts to stabilize.  The volume will return after a few seconds.

The effect of the Varipower is hard to notice at low volumes or with low inputs. If the amp is not being overdriven into saturation, then there will be no effect. An analogy would be the operation of a compressor, where the threshold has to be surpassed for the effect to be noticeable.
