Create a sample from an audio file

I attended a Pro Tools workshop for film/video post production where we used an M audio midi keyboard to playback foley sound effects samples that had been created from audio files. (.wav or .aif probably). These then were played from the keyboard and recorded on a track in Pro Tools.
There was no discussion of how these samples were created. Can anyone on here give me a workflow for that? Is there a Pro Tools plugin to help with that?
