In music this is the opposite of polyphonic and means playing only one note at a time. Many old (and some new) synthesizers are monophonic in that they can only play one note at a time. There are also a number of acoustic instruments that are monophonic.
In electronics or audio monophonic indicates only one channel of audio, as opposed to two (stereo) or quad (four).
