Would like to record separate tracks from each drum/cymbal from my Roland TD20 to my Mac Pro Tower - I have midi out, SPDIF out, main out, and 1/4" outs for each drum/cymbal.

Not sure if I should use midi to usb (can I separate tracks)?

Firewire is faster (what about latency)? Need an interface?
